Today we're going to go over a fantastic recipe I've been using for a few years now, and it is something that I've taught dozens of people, especially those who are KFC lovers.

It is a recipe for crunchy chicken breasts, but obviously they are healthy, made with lean white meat and oats.

Here is what you will need:

1. Chicken breasts - thaw the breasts and make sure they are completely thawed before cooking. I like to use 1 breast per person, so adjust this accordingly to the number of people you are cooking for.

2. 1/2 cup of plain oats - the type of oats you used doesn't matter, but it should be regular old fashioned oats

3. 1 tablespoon of salt (low-sodium salt is best)

4. 2 egg whites

5. Pam calorie-free butter flavored spray

Steps to making the chicken:

1. Take your strips and season them with a pinch of salt, rubbed all around. If you like a little kick to your chicken, add a pinch of some chili powder or some other hot spice. You can season according to your likings.

2. Dip the piece of chicken into the egg white, make sure it is completely covered in egg white

3. Roll the chicken breast piece in the bowl of oats until it is completely

4. Place the chicken on a tray that is covered with foil.

5. Once all the pieces are lined up, give them a once-over spray with your calorie-free Pam spray. This will help make the oats crispy and give it more crunch.

6. Heat the oven to 400F

7. Place the chicken in for 9 minutes, then turn all the pieces around and cook for another 9 minutes.

8. The oats will turn a nice golden-brown when they are ready. I highly recommend you cut one piece to ensure a white consistency throughout the chicken.

That's it!

What you now have is a healthy alternative to high-fat KFC chicken, or any other type of friend chicken for that matter. Add some side veggies or some butter-free mashed potatoes and you are ready to eat.

4 strips will yield approximately 200 calories with a high protein content, a moderate complex carbohydrate content, and very little fat.

As a way of adjusting the taste of the chicken to your personal preferences, you can add almost any type of spice or rub to the chicken, as long as it complements the crunchy texture of the chicken.

1 pound sirloin steak, cubed

Salt and pepper to taste

1 (14 oz.) can beef broth

3 large carrots, cubed

1 cup frozen green peas, thawed

3 tablespoons cornstarch

Directions

Preheat oven to 350 degrees.

In a saucepan over medium high heat, brown the pieces of meat on all sides. Pour in enough water to almost cover the meat. Bring to a boil and reduce heat. Simmer meat until it falls apart easily (about 2 to 3 hours). Place meat in a large bowl. Slightly shred the meat and season with salt and pepper to taste.

In a 2-quart saucepan, combine the beef broth, carrots and potatoes. Cook over medium high heat until almost tender (about 15 to 20 minutes).

When the carrots and potatoes are done, transfer to a large mixing bowl and combine with the beef. Reserve the liquid in the saucepan. Mix the peas in with the vegetables and beef.

Dissolve the cornstarch in 1/3 cup of water and pour this into the reserved beef broth. Bring to a simmer while stirring constantly; reduce heat. Cook for 5 minutes.

Line a 9-inch pie plate with one of the pie shells following package directions. Spoon the beef mixture into the pie crust. Pour the gravy on top. Cover with remaining pie crust.

Bake for 25 minutes, or until crust is golden brown. Let cool for 5 minutes before serving.

Broil the chicken for 3 to 4 minutes per side, until it is completely white and is just beginning to turn brown. Skewers make the turning-over process go faster. Serve immediately.

Caribbean food recipes are very interesting to me because they are usually a blend of European, African and Asian ingredients. Caribbean food history is intricately linked to the slave trade, and as a result, many foods were transplanted to the Caribbean Islands for the African slaves. With time, slavery was abolished, and instead, indentured servants from India and China were transported to the Caribbeans for additional labor. The end result is that many traditional Caribbean foods have influences from countries all over the world.

A typical West Indian dish may include steamed fish with rice and beans. The side dishes may include callaloo, fritters, or breadfruit. Of course the fish comes from the warm waters of the Caribbean sea. However, the rice is originally from China, the red kidney beans are from South America, the callaloo is originally from west Africa, fritters are made with flour from the Middle East, and breadfruit is originally from the Pacific Islands.

Steamed fish
The main thing I like about traditional Cayman food is its freshness. When I have steamed fish at a local Kitchen, it has literally been caught that morning, lightly seasoned, and prepared to perfection. My husband and I were regulars at the Heritage Kitchen when we lived in West Bay. The food is delicious, but always in short supply. If you didn't arrive just when the restaurant opened, you would likely not be able to order their fresh catch of the day. To prepare steamed fish, wash the fish in lime and then season it with salt and pepper to your taste. Heat coconut oil in a pan. Add the fish and cook it on both sides until it is golden brown. Add a sliced onion, a little water, and seasoning pepper. Cook on low heat for a few minutes until done.

Rice and Beans
Probably the first traditional Grand Cayman food I had was Rice and Beans. This is a dish that I originally tasted at one of the many local Grand Cayman restaurants and kitchens. Usually, Caribbean cooks like to play around with this dish until they make it their own creation. I've had it many different ways, but I think the best recipe is Rice and Beans - Cayman Style. To start, soak the beans overnight. Cook the beans until they are tender (about an hour). Drain the beans and save the bean water, it should be about 3 cups. You may need to add more water to get to 3 cups. In another pot, boil previously saved bean water, salt, black pepper, thyme, onion, and seasoning pepper. Add previously boiled beans and coconut milk and let everything come to a boil. Add the rice. Make sure there is about 1/2 inch of water over the rice and beans. When the pot starts to boil again, lower the heat and let it simmer for about 20 minutes or until all of the water is absorbed.

Breadfruit
This is a dish that I've only had in my home. My adventurous husband became curious about breadfruit and asked one of his Jamaican clients how to prepare it. It turned out to be very simple. First place the whole breadfruit in the oven for about an hour. This step is necessary so that you can easily cut the fruit. At this point you can eat the fruit by itself, soak it in butter, or eat it as a side dish to a meal. Another option, is to fry it up for just a couple of minutes on top of the stove. This is what we did the the result was scrumptious. After frying, it tastes a bit like potato, but with an interesting texture.

These traditional Caribbean food recipes are delicious and easy to make. If you use all fresh ingredients, then you are assured of a tasty Caribbean meal that you can easily make in your own home.
